Fennel is so underrated and underused, I myself forget about it….I’ve got to remember to buy and use it more often.
Wanting to make a savory meal without meat protein or what seemed like anything else in the house, I started to make a mental list of what I did have.
strong turkey stock
pre made pie crust, I bought on sale
almost dead parsley
a huge bulb of fennel!!
Veggie pot pie!
Layer potato to make bottom “crust”., and season with salt just before pouring filling in (potatoes need a lot of salt!). Saute onion, mushrooms, fennel, carrot in that order until soft. Add 2 t. poultry seasoning and toast spices (because it needed “something”), then sprinkle 4 tbl. flour and cook until there is no raw flour smell (it may dry out at this point). Add 1 c. whole milk, 1 1/2 c. stock. bring to a boil and let thicken, about 4-5 minutes.
Pour over layered potatoes in pie plate, top with pie crust….darn it, I forgot the parsley! Argh! Good thing I wanted to try something I saw on Pinterest. Layer fresh herbs IN the pie crust, cut shapes out (if desired) and top pie. I was going to cut out snowflakes, but I live in California! We have beautiful Sequoias, so this shape was good enough! (no, it’s NOT a Xmas tree!)
Bake at 350-375 for 45 minutes (remember, there are raw potato slices at the bottom of the pie that need to get cooked!), and until the dough is brown and crispy….why, why, why did I forget to brush the pie crust with egg wash? Note to self.
Delicious! I’m already wanting to make another, but better! And that’s when I screw things up!
Improvements or things I forgot:
1. if you salt the potatoes too soon they will start to sweat, so don’t salt them until filling is ready!
2. don’t forget to season before pouring into pie plate (salt & pepper….really? How could you forget?)
3. don’t forget fresh herbs, IN the sauce.
4. brush top crust with egg wash
5. thank goodness you put down parchment paper on the bottom of the oven, it WILL spill over….smart girl.
